September’s Motorhome Munchies, making easy meals from seasonal fruit and vegetables.
With September being harvest time we shared easy recipes that can be made with seasonal fruit and vegetables. Some of the recipes feature fruits that can be picked while walking through woodlands or even in your back garden.
Cauliflower Steaks
Cauliflowers are a great tasting British vegetable and what better way to cook them, than as steaks.
All you need:
• Cauliflower
• 2 tsp ras el hanout
• Half tsp ground turmeric
• Half tsp sweet smoked paprika
• 4 tbsp olive oil
• Salt & pepper
How we’d make them:
👩🍳 Cut the cauliflower in half, then cut 2 steaks from each half about 3cm thick.
👩🍳 Mix the spices in a small bowl with the olive oil and season with salt & pepper.
👩🍳 Brush the mixture over the steaks, coating each side evenly.
👩🍳 Cook the steaks on a medium to high heat for 4-5 minutes each side until tender and lightly charred.
Very tasty and healthy too 😋.
Apple & Blackberry Pasties
A simple dessert or snack recipe that’s easy to do in a motorhome or small kitchen.
All you need:
• 425g pack ready-rolled shortcrust pastry
• 2 Apples
• 2 tbsp brown sugar
• 150g blackberries
• Icing sugar
How we’d make them:
👩🍳 Heat the oven to 200C or gas 6.
👩🍳 Peel, core and chop the apples.
👩🍳 Dust the work surface with icing sugar.
👩🍳 Combine the apples, sugar and blackberries in a bowl.
👩🍳 Unroll the pastry and cut out 4 pieces (square or round depending on the templates you have, a small plate is good for round).
👩🍳 Add a small pile to each pastry piece.
👩🍳 Fold the piece over to encase the fruit, then pinch and fold the pastry over along the edges to make a pasty shape.
👩🍳 Slash each pasty 3 times.
👩🍳 Lift onto a greased baking tray and bake for 20 mins or until puffed and golden.
Serve with cream or ice cream. These can be eaten cold and are a great sweet treat in a picnic.
Marrow Curry
This dish can be served as a main or a tasty side to spiced roasted lamb or tandoori spiced chicken.
All you need:
• 1 marrow , peeled and cut into large chunks
• 2 tsp black mustard seeds
• 1 tsp cumin seed
• 1 large onion , finely sliced
• ½ tsp turmeric
• ½ tsp chilli powder
• 2 garlic cloves , crushed
• 1 tsp ground coriander
• sunflower oil
• lemon & roughly chopped coriander
How we’d make them:
👩🍳 Bring a pan of salted water to the boil add the marrow and simmer for 5-7 mins until softened,
👩🍳 Once softened drain the marrow.
👩🍳 Heat a drizzle of sunflower oil in a large frying pan and fry the mustard and cumin seeds until they start to crackle.
👩🍳 Add the onion, garlic and remaining spices, and fry for 10 mins until soft and starting to brown.
👩🍳 Add the marrow and cook for 5-10 mins until the liquid has evaporated and the marrow is really soft.
👩🍳 Smash the marrow lightly to crush and soften the edges
Serve seasoned with the lemon juice and chopped coriander.
Vegetable Fritters
Packed with flavour and colour this dish can be made in advance and quickly warmed on the bbq, eaten fresh with a tasty salad or as snacks with dips.
All you need:
• 200g gram flour
• 2 medium raw beetroots, peeled and grated
• 2 medium carrots, peeled and grated
• 1 bunch spring onions, finely sliced
• 2 tbsp vegetable oil
• salt & pepper
How we’d make them:
👩🍳 Pre-heat the oven to a medium heat.
👩🍳 Combine the flour, salt & pepper in a large bowl
👩🍳 Add the vegetables and stir through.
👩🍳 Add enough water to just bind the mixture together.
👩🍳 Heat the oil in a large frying pan over a medium heat..
👩🍳 Split the batter into smaller portions and flatten slightly (we suggest 4 if serving as a main or 8 if using as snacks)
👩🍳 Add each portion to the oil and fry for about 2 minutes each side, until crispy.
👩🍳 Transfer to a baking sheet and place into the oven for 5-10 minutes depending on the size of the fritters, to ensure the centre is cooked through.
Yum Yum 😋 we like ours served with some garlic mayo or sweet chilli dip.
