June Motorhome Munchies

When you cook meals from local and seasonal produce you can be sure that you’re using the freshest ingredients. Making this month’s motorhome munchies super tasty.

Strawberry & Spinach Salad

Strawberries aren’t always for desserts here’s the recipe for a tasty sweet summer salad.

All you need:
• 1 bag of fresh baby spinach
• 130g fresh strawberries sliced
• 70g Gorgonzola cheese crumbled
• 2 tablespoons honey
• 60ml balsamic vinegar
• 60ml olive oil
• 70g of walnuts (or nuts of your choice)

How we’d make it:
👩‍🍳 Combine the spinach, strawberries, Gorgonzola cheese, and pecans in a large bowl.
👩‍🍳 Stir the balsamic vinegar and honey together in a jug.
👩‍🍳 Slowly add the olive oil into the mixture while whisking continuously.
👩‍🍳 Season with salt & pepper.
👩‍🍳 Drizzle the dressing over the salad just before serving.

Wensleydale Mushrooms

In Wensleydale how about this simple tasty, cheesy recipe, maybe add a little more to the taste by foraging your own mushrooms in the Yorkshire Dales.

All you need for 4 servings:
• 50g butter
• 150g sliced mushrooms
• 3 rashers smoked bacon, chopped into bite size pieces
• 35g plain flour
• 190ml milk
• 150g/5oz Wensleydale cheese
• ground black pepper
• 4 Ramekins

How we’d make it:
👩‍🍳 Preheat the grill to hot.
👩‍🍳 Melt the butter over a medium heat then add the mushrooms and bacon and cook through.
👩‍🍳 When the mushrooms and bacon are cooked through, add the flour and stir in well. Keep stirring for a further couple of minutes to cook the flour.
👩‍🍳 Remove from heat and pour in the milk and some ground black pepper to taste.
👩‍🍳 Return the pan to the hob and stir continuously until boiling.
👩‍🍳 Remove from heat and stir in three-quarters of the cheese.
👩‍🍳 Divide the mixture into four ramekins, sprinkle over the remaining cheese and place under the hot grill until golden brown and bubbling.

Serve with some buttery brown toast for a hearty breakfast, to make a tasty lunch serve with some crusty bread or simply serve as a starter to a main meal.

Bacon Jam

Add a twist to the bacon & egg sandwich or vamp up your burgers with this tasty Bacon Jam relish.

All you need for 2 servings:
• 1 red onion finely chopped
• 2 garlic cloves finely chopped
• 6 rashers smoked streaky bacon roughly chopped
• 25g honey
• 30ml cider vinegar
• vegetable oil

How we’d make it:
👩‍🍳 Heat a frying pan over a high heat with a drizzle of vegetable oil.
👩‍🍳 Once hot add the chopped bacon and cook until starting to crisp.
👩‍🍳 Once crisp reduce the heat to low, add the chopped onion and garlic and cook for 10 mins until caramelised.
👩‍🍳 When caramelised, increase the heat to medium, add the honey, cider vinegar, a tablespoon of water and cook for 5 mins until sticky.
👩‍🍳 Serve as a burger relish or on a toasted brioche bun with a fried egg.

Cumberland Sausage & Colcannon Mash

Here’s a simple recipe for Cumberland sausage & colcannon mash. A hearty motorhome munchies after a day exploring.

All you need for 2 servings:
• 2 Cumberland sausage rings
• 2 large fluffy potatoes peeled & cut into chunks
• half a savoy cabbage finely shredded
• 1 bunch of spring onions finely sliced
• knob of butter
• splash of milk

How we’d make it:
👩‍🍳 Preheat the oven to a medium heat.
👩‍🍳 Place the sausages in a roasting tin & cook for 15 – 20 minutes.
👩‍🍳 Add the potatoes to a pan of water with a little salt and bring to the boil.
👩‍🍳 When boiling reduce heat and simmer for 10 minutes.
👩‍🍳 After 10 minutes add the cabbage to the pan and simmer for a further 10 minutes until the potatoes are soft.
👩‍🍳 Drain then mash the cabbage and potatoes adding a knob of butter and splash of milk.
👩‍🍳 Stir through the spring onions.

Serve together with lashings of gravy.

Arctic Char with Mustard Maple Glaze

Artic Char is one of the fish species found in Lake Windermere.

All you need for 4 servings:
• 4 Arctic char fillets
• 1 tablespoon Dijon mustard
• juice of 1 lemon
• 2 tablespoons of maple syrup
• 1 tablespoon of olive oil
• salt & freshly ground pepper

How we’d make it:
👩‍🍳 Heat the bbq to a medium heat and rub a little oil on the grill rack.
👩‍🍳 Lightly season the arctic char with salt & pepper and place skin side down on the grill.
👩‍🍳 Cook covered for 4 minutes then turn the arctic char over and cook for 3-5 minutes more until cooked through.
👩‍🍳 While the arctic char is cooking whisk together the Dijon mustard, olive oil, lemon juice & maple syrup.
👩‍🍳 When the arctic char is cooked brush both sides with the mustard maple glaze and serve.

We know how important it is to you that we allow furry friends into our Motorhomes, that’s why we do!

We want you to enjoy adventures together, providing of course you and your pet abide by our house rules outlined here and, in our terms and conditions, to which you must agree.

  • You agree your Pet will not be left in the Motorhome unattended.
  • You will not allow your pet on any of the soft furnishings or upholstery (including the beds, seats / sofas)
  • You will return our Motorhome in a clean and tidy condition as if your pet was never present.
  • You agree if you return our Motorhome unclean/untidy, if it is evident your pet was present, and if any pet hairs are found, cleaning charges and upholstery cleaning charges will apply. The minimum charge for this is £100.00
  • You agree to cover the cost of all damage caused by a pet, even if it exceeds the Security Deposit (as outlined in section 13 of our terms and conditions)
