July’s Motorhome Munchies, 4 weeks and 4 tasty recipes to cook on the barbecue as a main or simply serve as a side to your favourite dish.
Barbecues aren’t always about burgers & sausages. So this month we have focussed on tasty simply recipes you can cook on the barbecue or grill in the motorhome.
Pickled Cucumber Salad & Sriracha Mayo
Serves 4 – 6
All you need:
• 1 cucumber
• 2 Carrots
• 60ml Rice Vinegar
• 30ml Sriracha Chilli Sauce
• 60ml mayonnaise
• Sugar
• Salt
How we’d make it:
👩🍳 Peel lengths off the cucumber until you have a pile of ribbons.
👩🍳 Grate the carrots.
👩🍳 Mix together, the rice vinegar, half the sriracha sauce with a pinch of sugar & salt in a large bowl.
👩🍳 Add the carrot & cucumber and give everything a good mix up.
👩🍳 For the sriracha mayo simply mix the remaining sriracha sauce with the mayonnaise.
Ideal for serving on a burger or a side salad to your favourite barbecue dish.

Balsamic Veg Skewers
Here’s how we like to cook vegetables on the barbecue.
All you need:
• Skewers (if wooden soak in water)
• Selection of vegetables
Best vegetables to bbq are:
• Onions
• Bell peppers
• Mushrooms
• Corn on the cob
• Cauliflower
• Broccoli
• Cherry Tomatoes
• Courgette
For the marinade:
• 125ml Olive oil
• 60ml Balsamic Vinegar
• 1 teaspoon crushed garlic
• Salt & pepper
How we’d make it:
👩🍳 Chop the vegetables to roughly the same size.
👩🍳 Mix together the olive oil, balsamic vinegar, garlic, salt & pepper.
👩🍳 Put the vegetables & marinade in a large freezer bag mix up and leave to marinade for over 1hr.
👩🍳 Once marinated thread the vegetables onto the skewers.
👩🍳 Cook on a medium heat, rotating every 3-5 mins until cooked through.
These make a great side dish or a tasty main served with couscous.

BBQ Sea Bream
It’s time for a fish dish!
Simply & tasty 😋.
All you need:
• Sea bream (scaled & gutted)
• Lemon (sliced)
• Salt
• Olive oil
How we’d make them:
👩🍳 Season the inside of the fish with salt.
👩🍳 Place the sliced lemon in the middle of the fish.
👩🍳 Lightly oil the skin.
👩🍳 Cook on a hot bbq for 10 – 15 minutes.
Great served with some grilled sweet peepers, and an impressive dish to cook on a disposable barbecue 😃.
Jack Daniels Honey Bananas
(chocolate for the kids 😂)
I’m thinking what’s for dessert!
Here’s a simple barbecue dessert.
All you need:
• Bananas
• Jack Daniels Honey Whiskey
• Chocolate bar for the kids
• Tin Foil
How we’d make them:
👩🍳 Create a split down the middle of the bananas.
👩🍳 Pour in some JD Honey or place some chocolate pieces into the spilt.
👩🍳 Wrap in foil and cook on the bbq for about 5 mins.
👩🍳 Once cooked peel the bananas and serve with cream or ice cream.
We find squirty cream is the best, especially for storing in the motorhome.

You will need to bring a barbecue with you. If you haven’t already got one disposable bbqs are great and there no cleaning afterwards. Another helpful tip to avoid washing the pots and using lots of water is to use disposable plates and cutlery.
